Founded by Robin Bourgeron (Glion alumnus) and later joined by his fellow Glion graduate Philippe Brest, Tailor Chef is a consulting agency dedicated to shaping the future of food & beverage concepts — from strategic creation to operational excellence.
Together with Clément Bidard, Michelin-awarded chef, fifth-generation cook, and member of the Jeunes Restaurateurs d’Europe (JRE), they form a complementary trio combining strategic vision, culinary mastery, and operational expertise.
From their shared journey in the classrooms of Glion to professional experiences across the world, Robin, Philippe, and Clément built Tailor Chef around one guiding idea: a tailor-made approach to every project — where creativity, precision, and business performance go hand in hand and being able to operate anywhere in the world.
